Changing platform is the riskiest moment in a site's life as far as Google is concerned. Moving the content is technically straightforward. Keeping rankings built up over years is where many fail, and it is almost always the URLs that cost them the traffic.
Two thirds of the project is preparation and checking; only a third is the data move itself.

Text, products, images and files are moved from, for example, Wix, Joomla, Drupal or an older shop platform.
Every old address is paired with a new one. No page may end in a 404 error.

The domain is repointed, a new sitemap is submitted and indexing is tracked.
Export the list of indexed pages before work begins, not afterwards. Once you switch, the old URLs can no longer be gathered: Search Console starts reporting the new ones and search results update. Without that list the redirect plan is guesswork, and some traffic vanishes for good.
With a careful move the dip is small and usually recovered within one to two months. Those who lose out change URLs without redirects or send everything to the home page. A page-by-page URL map is your most important insurance.
You can, but think it over: if nothing changes on the outside, why switch platform at all? The move is more often combined with a refreshed design, since everything is being rebuilt anyway.
Keep it switched off but intact, with its database, for at least a few months. It is insurance: if a section turns up that did not come across, it can be retrieved. Deleting the old site the day after the switch is a bad idea.
